Savory is Herbaceous, annual plant with slender erect stems about 30 cm height. Its color is dark green. The stems have nodes which branch out other stems. Its leaves are thin, long, sharp pointed, soft and the hairs on the stem are short and decurved. Savory leaves have a vein and glands full of essential oil. The flowers having small, pale lilac labiate flower and appear in summer. Savory grows in different places of Iran as Northwestern, Tabriz, Khoy, Arasbaran and different areas of Khorasan.
Essential Compositions: Savory contains an essential oil in varying amounts; good quality should range between 1 and 2% which includes carvacrol, thymol, Betapinene, parasyn, limonene and kamfon, other compositions are vitamins and minerals.
Essential Features: Because savory has fennel in its essential oil and also tannin compositions in the leaves, has fungicide, antimicrobial, antispasmodic, anti-diarrheal features. It is also anti-diuretic. Other properties of savory are analgesic, anti arthritis, antibacterial, anti-carcinogenic, anti-secretion of urine, antivirus, anti-herpes, anti-parasite, diaphoretic, digestive and narcotic.
Instruction for use: You can use it as a fresh vegetable or pour 1.5g of its dried leaves in a cup of boiled water for 20 minutes. 2 tea spoon of the dried plant could be used every day.
